The questions importers ask before they are ready to talk.
These are reference pages, not offers. Nothing here quotes a price, names a producer or claims stock.

- who does what at each step of an export. If the whole thing feels like somebody else's world, start here. You do not need your paperwork in order, or a plan, before talking to anybody. The sequence, who owns which piece, and the parts that are smaller than they look.
- the documents to ask an Australian supplier for. The paperwork question kills more deals at week six than price ever does, so it is worth asking at week one. What each document proves, and which ones a small producer genuinely may not hold yet.
- how counter seasonal supply actually works. Australia harvests when the northern hemisphere does not. That is a timing advantage rather than a quality claim, and it is the most concrete reason to look south at all.
- a plain guide to Australian honey varieties. Jarrah, Karri, Blackbutt, Red Gum and the rest: floral source, colour, flavour and where each one grows, without the health claims the category is usually sold with.
- what a disclosed export agent is, and how it differs from a trader who buys your goods and resells them. The difference decides who sets the price and who carries the risk.
Why we publish this rather than a brochure
Most of what a new importer needs to know about buying Australian food is not secret, it is just scattered across government pages written for exporters rather than for the person on the other end. Collecting it in one place costs us nothing we mind losing, and a buyer who arrives already knowing what to ask is a better conversation than one we have to educate from zero.
It is also the honest test of whether we know the category. Anybody can write that they are experienced. Publishing the actual mechanics, in enough detail to be checkable, is harder to fake, and you are welcome to check it against what we say about our own position.
